It’s hard to pick a best part, but remember that you will only have a few minutes of total prep time. The longest part of this process is just letting these babies cook to perfection before you dig in!
Peanut Butter Stuffed Jalapenos:
Fresh, whole Jalapenos (cook as many as you want because the recipe is the same no matter the number you choose to cook, from 3 to 30, etc.)
Peanut Butter (use your favorite kind; crunchy obviously provides a little more texture, but creamy is what we traditionally use)
¼ Cup Water (or just enough to create some steam)
Any sharp knife will do, but a Paring Knife is ideal
Glass Baking Dish
Wash your fresh Jalapenos
Slice a slit length-wise down the entire Jalapeno; repeat this for each pepper.
Scoop out all seeds with a spoon, discard the seeds, and rinse the pepper once more (unless you want to keep the heat)
Scoop approximately 1 Tablespoon of Peanut Butter (or enough to fill generously) into EACH Jalapeno
Fill baking dish with all Jalapenos, then
Pour the water in the dish
Bake @ 400 Degrees for 20-30 minutes or until the Jalapenos look cooked to your liking. (You want them to change from their natural shade of dark green to a lighter green similar to the shade in the image above).
